i would say yes if the edge you are putting it on is the right size. It's made of strong nylon so it should provide good protection.

Q: Would this work to cover the top edge of metal lawn edging

Probably not. But it might if the lawn edging is not disturbed. The trim protector is not held on very tightly - just enough in typical cabinet installation, through-hole protection.

Q: Will this work on the edge of cut plexiglass to protect from sharp edges?

It depends on how thick the plexi is. It should also be noted that this product doesn’t have any type of adhesive to keep it in place.

Q: Will this fit a 5/64" or 0.078" thick panel? Difficult to tell from the description

What this description means to say is that it is available in the other sizes. This particular item has two pieces, one white and one black, both the same size, that can fit thicknesses from 0.030" to 0.045". It could maybe squeak by with some persuasion on an 0.050" panel, but it would probably then be more prone to slipping off. So your answer is - no.
